  • 1/3 cup chia seeds
  • 1 cup unsweetened almond milk or other plant-based milk
  • 2 tablespoons cocoa powder
  • 1-2 tablespoons maple syrup adjust to taste
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Toppings optional: fresh berries, sliced almonds, coconut flakes, additional cocoa powder

Instructions
 

  • Prepare the Pudding
  • In a mixing bowl, combine the chia seeds, plant-based milk, cocoa powder, maple syrup, vanilla extract, and salt.
  • Whisk thoroughly until all ingredients are well combined and there are no clumps of chia seeds.
  • Let the mixture sit for 5 minutes, then whisk again to ensure the chia seeds are fully hydrated and distributed evenly.
  • Chill the Pudding
  • Divide the mixture between two glass jars or containers.
  • Cover and refrigerate for at least 3 hours or overnight to allow the chia seeds to absorb the liquid and create a pudding-like texture.
  • Add Toppings
  • Before serving, add your desired toppings such as fresh berries, sliced almonds, coconut flakes, or a dusting of cocoa powder.

Notes

  • The pudding will thicken more as it sits in the refrigerator. If you prefer a thinner consistency, add a little more plant-based milk when preparing.
