Step 1: Prepare the Meatball Mixture
In a large bowl, combine ground turkey, chopped onion, minced garlic, parsley, egg, Parmesan cheese, breadcrumbs, salt, pepper, paprika, and oregano. Mix thoroughly until all ingredients are well combined.
Step 2: Form the Meatballs
Using clean hands, roll the mixture into 1.5-inch meatballs (about 1.5 tablespoons each). You should get approximately 24-28 meatballs.
Step 3: Brown the Meatballs
Heat olive oil in a large skillet over medium-high heat. Add meatballs in batches without overcrowding the pan. Brown each side for 2-3 minutes until golden brown. Remove and set aside on a paper towel-lined plate.
Step 4: Prepare the Marinara Sauce
In the same skillet, add crushed tomatoes, tomato paste, sugar (if using), red wine vinegar, bay leaf, and red wine (if using). Stir well to combine.
Step 5: Simmer Meatballs in Sauce
Return meatballs to the skillet with the sauce. Reduce heat to low, cover, and simmer for 20-25 minutes until meatballs are cooked through and sauce has thickened slightly.
Step 6: Serve
Garnish with fresh basil leaves and additional grated Parmesan cheese. Serve hot with crusty bread or over pasta.
