Ingredients
  

  • 1 lb 450g ground turkey
  • 1 medium onion finely chopped
  • 3 garlic cloves minced
  • 1/2 cup fresh parsley chopped
  • 1 egg
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp dried oregano
  • 2 tbsp olive oil
  • 1 28 oz can crushed tomatoes
  • 1 tbsp tomato paste
  • 1 tsp sugar optional, to balance acidity
  • 1 tsp red wine vinegar
  • 1 bay leaf
  • 1/4 cup red wine optional
  • Fresh basil leaves for garnish
  • Grated Parmesan cheese for serving

Instructions
 

  • Step 1: Prepare the Meatball Mixture
  • In a large bowl, combine ground turkey, chopped onion, minced garlic, parsley, egg, Parmesan cheese, breadcrumbs, salt, pepper, paprika, and oregano. Mix thoroughly until all ingredients are well combined.
  • Step 2: Form the Meatballs
  • Using clean hands, roll the mixture into 1.5-inch meatballs (about 1.5 tablespoons each). You should get approximately 24-28 meatballs.
  • Step 3: Brown the Meatballs
  • Heat olive oil in a large skillet over medium-high heat. Add meatballs in batches without overcrowding the pan. Brown each side for 2-3 minutes until golden brown. Remove and set aside on a paper towel-lined plate.
  • Step 4: Prepare the Marinara Sauce
  • In the same skillet, add crushed tomatoes, tomato paste, sugar (if using), red wine vinegar, bay leaf, and red wine (if using). Stir well to combine.
  • Step 5: Simmer Meatballs in Sauce
  • Return meatballs to the skillet with the sauce. Reduce heat to low, cover, and simmer for 20-25 minutes until meatballs are cooked through and sauce has thickened slightly.
  • Step 6: Serve
  • Garnish with fresh basil leaves and additional grated Parmesan cheese. Serve hot with crusty bread or over pasta.

Notes

  • For a healthier version, bake meatballs on a baking sheet at 375°F (190°C) for 15-20 minutes instead of frying.
  • The sauce can be made ahead of time and stored in the refrigerator for up to 5 days.
  • Add a pinch of red pepper flakes to the sauce for a spicy kick.
  • For extra flavor, add a splash of balsamic vinegar to the sauce before serving.
