Ingredients
  

  • For the Potatoes:
  • 1-2 large baking potatoes or baby potatoes, washed and cubed
  • 3 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika
  • ½ tsp dried oregano
  • ½ tsp garlic powder
  • For the Baked Feta & Garlic:
  • 1 block 8 oz or 200g feta cheese
  • 3 cloves garlic minced (or 1 head of garlic with top sliced off)
  • 1 tbsp olive oil
  • ½ tsp red pepper flakes optional
  • ½ tsp dried thyme or oregano
  • For Garnish:
  • 2 tbsp fresh parsley or basil chopped
  • 1 tbsp lemon juice optional
  • 1 tbsp honey optional

Instructions
 

  • Step 1: Preheat Oven
  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  • Step 2: Prepare the Potatoes
  • In a large mixing bowl, toss the cubed potatoes with 2 tablespoons of olive oil, salt, pepper, smoked paprika, oregano, and garlic powder.
  • Make sure the potatoes are evenly coated with the seasoning.
  • Step 3: Roast the Potatoes
  • Spread the seasoned potatoes in a single layer on the prepared baking sheet.
  • Roast in the oven for 20-25 minutes.
  • Step 4: Prepare the Feta and Garlic
  • While the potatoes are roasting, place the block of feta cheese in a small baking dish.
  • Drizzle it with the remaining 1 tablespoon of olive oil and sprinkle with minced garlic and red pepper flakes (if using).
  • Step 5: Add Feta to the Oven
  • After the potatoes have roasted for 20-25 minutes, remove the baking sheet from the oven.
  • Place the baking dish with the feta alongside the potatoes in the oven.
  • Step 6: Finish Roasting
  • Roast for an additional 15-20 minutes, or until the potatoes are golden brown and crispy, and the feta is soft and slightly golden on top.
  • Step 7: Assemble and Serve
  • Carefully transfer the roasted potatoes to a serving platter.
  • Crumble the warm feta over the roasted potatoes.
  • Garnish with fresh parsley or basil, a squeeze of lemon juice, and a drizzle of honey if desired.
  • Serve immediately while warm.
