Place the baking dish with the feta alongside the potatoes in the oven.
Step 6: Finish Roasting
Roast for an additional 15-20 minutes, or until the potatoes are golden brown and crispy, and the feta is soft and slightly golden on top.
Step 7: Assemble and Serve
Carefully transfer the roasted potatoes to a serving platter.
Crumble the warm feta over the roasted potatoes.
Garnish with fresh parsley or basil, a squeeze of lemon juice, and a drizzle of honey if desired.
Serve immediately while warm.
