Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1 egg
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 1/2 cup powdered sugar for rolling

Instructions
 

  • Step 1:
  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Step 2:
  • Combine 1 1/2 cups all-purpose flour, 1/2 teaspoon baking powder, and 1/4 teaspoon salt in a medium bowl. Whisk until blended.
  • Step 3:
  • In a separate large bowl, beat 1/2 cup softened butter with 3/4 cup granulated sugar until light and smooth.
  • Step 4:
  • Add 1 egg to the butter mixture, then stir in 2 tablespoons fresh lemon juice, 1 tablespoon lemon zest, and 1/2 teaspoon vanilla extract.
  • Step 5:
  • Slowly add the dry ingredients to the wet mixture. Stir gently until a soft dough forms. Avoid overmixing.
  • Step 6:
  • Portion the dough using a small ice cream scoop or spoon to form even balls. Roll each ball in 1/2 cup powdered sugar.
  • Step 7:
  • Place the dough balls on the prepared baking sheet with enough space between them.
  • Step 8:
  • Bake for 10–12 minutes until the edges are set and the centers remain soft.
  • Step 9:
  • Remove the cookies from the oven and let them cool on the sheet for a few minutes. Transfer to a wire rack to cool completely.
