Instructions
 

  • Prep Sweet Potatoes: Preheat oven to 425°F (220°C). Scrub sweet potatoes (no need to peel) and slice into 1/4-inch thick fries.
  • Dry & Coat: Pat fries dry with a paper towel. Toss in a bowl with olive oil, cornstarch (if using), smoked paprika, garlic powder, onion powder, cayenne, salt, and pepper until evenly coated.
  • Arrange on Sheet: Spread fries in a single layer on a parchment-lined baking sheet. Avoid overcrowding to ensure crispiness.
  • Bake: Bake for 20-25 minutes, flipping halfway through, until edges are crispy and golden.
  • Serve: Let cool slightly and enjoy immediately with dipping sauces like garlic aioli or ketchup.
