Instructions
 

  • Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  • Cream butter and sugar in a large bowl using an electric mixer until light and fluffy (about 3 minutes).
  • Add egg, Greek yogurt, and vanilla; mix until well combined.
  • In a separate bowl, whisk together flour, baking powder, and salt.
  • Gradually add dry ingredients to the wet mixture, mixing until just combined (do not overmix).
  • Roll dough into balls (about 1 tablespoon each) and place on prepared baking sheets. For shaped cookies, roll dough to 1/4-inch thickness and cut with cookie cutters.
  • Bake for 10-12 minutes until edges are lightly golden.
  • Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
