Ingredients
  

  • 1 lb 450g beef chuck roast (can use brisket as an alternative)
  • 2 tbsp olive oil extra virgin
  • 1 large onion thinly sliced
  • 3 cloves garlic minced
  • 1 cup beef broth
  • 1/4 cup Worcestershire sauce
  • 2 tbsp soy sauce
  • 1 tbsp Dijon mustard
  • 1 tsp dried thyme
  • 1 tsp ground black pepper
  • 1 tsp paprika
  • 1/2 tsp red pepper flakes optional
  • 4 sandwich buns preferably soft rolls or ciabatta
  • Cheese slices optional (Swiss, provolone, or cheddar)

Instructions
 

  • Prepare the Beef
  • Heat olive oil in a large skillet over medium-high heat. Sear the beef chuck roast on all sides until browned (about 4-5 minutes per side). Transfer the roast to the slow cooker.
  • Create the Sauce
  • In the same skillet, add sliced onions and minced garlic, cooking for 2-3 minutes until softened. Add beef broth, Worcestershire sauce, soy sauce, Dijon mustard, thyme, black pepper, paprika, and red pepper flakes (if using). Stir well to combine.
  • Slow Cook the Beef
  • Pour the sauce over the beef in the slow cooker. Cover and cook on low for 6-8 hours, or until the beef is tender and shreds easily with a fork.
  • Shred the Beef
  • Once cooked, remove the beef from the slow cooker. Using two forks, shred the beef into bite-sized pieces. Return the shredded beef to the slow cooker and stir to coat with the sauce.
  • Assemble the Sandwiches
  • Toast the sandwich buns lightly. Pile the shredded beef onto the buns, adding cheese slices if desired. Serve hot, with extra sauce if desired.

Notes

  • Beef Cuts: If you don't have beef chuck roast, you can also use brisket, round, or any cut suitable for slow cooking.
  • Sandwich Toppings: Customize with toppings like lettuce, pickles, or even sautéed mushrooms to enhance the flavor.
  • Slow Cooker Tip: For more flavor, cook the beef on low for the full 8 hours. You can also use a pressure cooker to speed up the process, but slow cooking allows the flavors to meld beautifully.
