Ingredients
  

  • 8 slices thick-cut bread e.g., brioche or white bread
  • ¼ cup granulated sugar
  • 1 tbsp ground cinnamon
  • 2 large eggs
  • ½ cup whole milk
  • 2 tbsp unsalted butter melted, for frying
  • Glaze:
  • 1 cup powdered sugar
  • 2 tbsp milk
  • ½ tsp vanilla extract

Instructions
 

  • Prepare Filling: In a small bowl, mix sugar and cinnamon.
  • Roll Bread: Lay bread slices flat. Use a rolling pin to flatten slightly. Spread 1 tbsp cinnamon sugar on each slice, leaving edges clean. Roll tightly into cylinders.
  • Dip in Batter: In a shallow dish, whisk eggs and milk. Dip each roll-up in the mixture, coating evenly.
  • Fry: Heat skillet over medium-low. Fry roll-ups 2-3 minutes per side until golden. Transfer to a cooling rack.
  • Make Glaze: Whisk powdered sugar, milk, and vanilla until smooth.
  • Serve: Drizzle glaze over warm roll-ups. Optional: garnish with powdered sugar or fresh berries.

Notes

  • Use day-old bread for easier rolling.
  • Adjust cinnamon sugar to taste.
  • Reheat leftovers in a 350°F oven for 5 mins.
